Broiled Salmon with Marmalade-Dijon Glaze

*My Yummy Lunch Under 600 Calories*




Yum! Guess what girl is crazy in love with Salmon.....Me! Lucky me it works into my diet plan too! On the fitness plan I am currently on I get to have a 400-600 calorie lunch (within limits).  Being pressed for time I also wanted something that wouldn't take a lot of time to make or clean up! I found this recipe and made it today for lunch.  I will be making it again some time soon! I suggest always buying fresh salmon instead of frozen bagged salmon! :) I bought a head of broccoli and baby carrots and steamed 2-3 cups to complete the meal.

Broiled Salmon with Marmalade-Dijon Glaze



Ingredients

  • 1/2 cup orange marmalade
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground ginger
  • (6-ounce) salmon fillets
  • Cooking spray

Preparation

  • Preheat broiler.
  • Combine first 6 ingredients in a small bowl, stirring well. Place fish on a jelly-roll pan coated with cooking spray. Brush half of marmalade mixture over fish; broil 6 minutes. Brush fish with remaining marmalade mixture; broil for 2 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
